Pantry Nachos

Nachos don't need a grocery run — just what's already in the cabinet. Canned corn, beans, and tomatoes turn into salsa in a bowl, no cooking required. Five minutes, one microwave, and it's a real meal, not just a snack.

    1 can corn, drained

    1 can beans, drained and rinsed

    1 can diced tomatoes, drained

    Combine in a bowl — this is your salsa.

    Bonus, if you have it:

    Onion, garlic powder, lime juice, hot sauce

    Stir any of the above into the salsa to taste.

    Tortilla chips

    Spread chips on a microwave-safe plate. Spoon the salsa over the top.

    Bonus, if you have it:

    Shredded cheese

    Sprinkle over the top.

    Microwave 45 seconds, until warmed through and cheese is melted.

This is the fastest thing in the rotation, and my kids never complain about it. No black beans? Pinto or kidney work fine. If jalapeños are around, a few sliced on top add a nice kick without much effort. Leftover salsa also makes a great topper for rice or eggs the next morning.
