
No-Griddle Pancakes
Even without a stove, you can still have blueberry pancakes!
Comfort foods don't have to take too long. This recipe feels like home.

1 tablespoon cooking oil, butter, or margarine
Melt the oil, butter, or margarine on 50% power in the microwave, about 30 seconds.

3 tablespoons water
1/3 cup pancake mix
1 teaspoon sugar, honey, or syrup
Mix the water into the melted oil, then add the pancake mix and sugar. Stir well — a few lumps are fine, don't overmix.

Bonus, if you have it:
a handful of blueberries or strawberries, fresh or frozen
sliced banana
a sprinkle of cinnamon
Sprinkle the blueberries over the batter, if using.

Microwave on 50% power for 1 minute, until the top is no longer wet. Eat right away — it deflates and gets tougher as it sits.
Make it yours
This recipe is flexible — it'll take any fruit you have on hand. Strawberries that need eating? Toss them in. Have a banana? Slice it in and it tastes almost like a quick banana bread. A little cinnamon on top doesn't hurt either. It's a really nice one for a cool morning.
