
Peanut Butter Oat Cup
One mug, one spoon, breakfast done.
Adapted from a recipe by Second Harvest. One mug, about five minutes, and breakfast comes out warm, filling, and a little cake-like. It cooks in the mug you eat it from, so there's only one thing to wash.
Steps

A little cooking oil or margarine.
Grease the inside of a large microwave-safe mug, at least 12 ounces. Use a big one, since the oats rise as they cook.

¾ cup oats
2 tbsp peanut butter
2 tbsp sugar
½ cup water
Bonus, if you have it:
milk in place of the water
Stir everything together in the mug until the peanut butter is fully mixed in.

½ tsp baking powder
pinch of salt
Bonus, if you have it:
cinnamon, a drop of vanilla
Stir in until you don't see any streaks.

chocolate chips, a spoonful of strawberry jelly, or drained canned fruit
Gently fold in whatever toppings you have.

Cover with a paper towel and microwave 2 minutes. If the center still looks wet, go 30 seconds more.

Let it sit a minute before eating. The mug will be hot.

I love to add chocolate chips and a little strawberry jelly, and then it's perfect.
