
Slow Cooker Lentil Sloppy Joes
All the sloppy joe flavor, none of the ground beef — the lentils do the work while you're gone.
Dried lentils go into the pot as-is — no soaking, no pre-boiling. Six to eight hours later they've soaked up a smoky, tangy sauce and hold together just like the beef version would. Serve it over buns, or bread if you've got it. Nutrition is an estimate: about 180 calories and 13g protein per serving of the lentil mixture (not counting the bun).

1½ cups dried lentils
1 (14.5 oz) can diced tomatoes
1 tbsp chili powder
1 tsp garlic powder
1 tsp onion powder
3 cups water or broth

Combine everything in the Crock-Pot. Stir once.

Set to low and cook 6–8 hours, unattended.
