
Microwave Fried Rice
Rice and vegetables make a solid base on their own, but eggs are what turn this into a real meal — and they're one of the more common things to find in a pantry box. Everything cooks separately in the microwave, then comes together in one dish. Ready in about five minutes.
Steps

1 packet microwave rice
Microwave the rice per package instructions. Fluff with a fork.

1 cup frozen mixed vegetables, or 1 can mixed vegetables, drained

Place in a microwave-safe bowl (add a splash of water if using frozen). Microwave 60–90 seconds until tender.

Canned chicken, soy sauce
Beat in a microwave-safe bowl or mug, cover loosely, and microwave 60–90 seconds until cooked through. Break into pieces with a fork.

Combine rice, vegetables, egg, and any of the above in a microwave-safe dish. Stir well.

Microwave 30–60 seconds more, until heated through.

Salt and pepper
Season to taste and serve.
Make it yours
Eggs are what make this feel like a real meal instead of a side dish, so use them if the pantry box has them that week. No frozen or canned mixed vegetables on hand? Any combination of canned corn, peas, or carrots works just as well. A splash of soy sauce goes a long way — start with less and add more to taste.
