Bean & Cheese Rice Bowl
Seasoned beans over rice with melted cheese and whatever toppings you've got.
This is the bowl to make when you've got a can of beans, some rice, and five minutes. Season the beans well, melt some cheese on top, and everything else is a bonus.
Steps
- 1
1 can beans (black, pinto, or any), drained and rinsed
½ tsp chili powder or cumin
pinch of salt
Bonus, if you have it:
2 spoonfuls salsa
Stir the beans and seasoning together in a microwave-safe bowl. Mash a few with a fork so they get creamy.
- 2
—
Cover loosely and microwave 1½–2 minutes, stirring halfway, until hot all the way through.
- 3
1 packet microwave rice, or 2 cups cooked rice
Heat the rice following the package directions, or 1–2 minutes for leftovers.
- 4
½ cup shredded cheese
Bonus, if you have it:
Lettuce
hot sauce
sour cream
Divide the rice between bowls, spoon the beans on top, and scatter the cheese over the hot beans so it melts.
Make it yours
This one is all about what you've got. Any beans work. Melt the cheese right onto the hot beans, then add whatever's around: salsa, a little lettuce, or hot sauce all make it something different. Leftover rice is perfect here.
